Recipe for Beef Soup


  • 1,5 kgr beef
  • 1 leek (cut in washers)
  • 10-12 small onions
  • 10 small potatoes
  • 8-10 baby carrots
  • 1 bay leaf
  • 1 sprig rosemary
  • thyme
  • 1 liter beef broth
  • 1 lemon peel
  • olive oil, salt, pepper

Cooking Directions

Put in a saucepan and add about 1.5 liter water.

Boil the calf over high heat and remove the foam.

When the meat is cooked, add the beef broth, the bay leaves, the rosemary, the peel the lemon, the thyme, the onions and the potatoes.

Add a little salt, pepper and olive oil and simmer.

About 15 minutes before remove from the heat, add the carrots and leeks.

Remove the bay leaf, the rosemary and the lemon peel.

Serve warm with plenty of lemon juice!
