Recipe for Biryani

Ingredients

  • 1 kilo mutton with bones.
  • 4 cups rice
  • 6 whole cloves
  • 1 tablespoon chopped ginger
  • 4 chopped onions
  • 5 whole cardamom
  • 2 chopped green chilies (optional)
  • 1 tablespoon cumin powder
  • 5 tablespoons ghee (for cooking)
  • 2 chopped tomatoes
  • 2 cinnamon sticks
  • Salt to taste
  • 2 tablespoons chopped garlic
  • 5 tablespoons yogurt
  • 3 onions cut in long slices (for garnish)
  • 6 whole black peppercorns
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • Saffron or food coloring (can be bought from
  • the market)

Cooking Directions

In a pan heat ghee or oil then add onions, cinnamon, cloves, cardamom, and pepper corns.

Fry till onion is transparent and about to turn light brown. Add meat and mix well.

When the water of the meat starts to dry add the tomatoes, garlic and ginger.

The time the tomatoes dissolves and the oil starts to surface, add 4 cups of water and let it boil till the water evaporates.

Mix yoghurt with all powder spices and add it to the meat, keep mixing well.

If you feel that the meat needs to cook some more still, then add water and let it boil. You should end up with thick gravy.

In a different pan fry the slices of onions which are meant for garnishing, until golden brown and set aside.

Boil the rice, when it’s cooked pour saffron mixed with water on top of it or, you can use the food coloring powder mixed with water.

Put a layer of the rice in the bottom of the pan, then a layer of the meat, then rice again. Garnish with the fried onions (refer to picture 20).
