Recipe for Black Eyed peas Salad and Corn Soup
Ingredients
- 2 Cups of cooked black eyed peas
- 1 medium size boiled and cut into small potatoes
- 2 medium size cut tomatoes into small pieces
- ¼ cup chopped green bell pepper
- 1 chopped green chili
- 1 teaspoon chopped ginger
- 1 tablespoon chopped cilantro
- 1 tablespoon chopped mint leaves
- 1 tablespoon oil
- Ingredients for dressing:
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon ginger juice
- ½ teaspoon roasted cumin powder
- ½ teaspoon black grounded pepper
- salt to taste
Cooking Directions
Preparation for Salad:Soak black eyed peas for couple of hours.
Boil them in pressure cooker for about 10 minutes. Let the pressure cooker cool and then drain the water from peas completely.
Put the oil in pan. Stir fry potatoes and peas for about 2-3 mins. Let it cool then add all chopped vegetables.
Preparation for dressing:
Mix well all ingredients together.
For Serving:
Add dressing just before serving salad.
