Recipe for Brown Rice Vegetable Pilaf

Ingredients

  • Brown basmati rice 2 cups
  • Rice bran oil 2 tablespoons
  • Bay leaf 1
  • Cloves 2-3
  • Cumin seeds 1 teaspoon
  • Cinnamon 1 inch stick
  • Salt to taste
  • Green peas(shelled) 1/2 cup
  • Carrots(diced) 2 medium
  • French beans(chopped) 10-12
  • Cauliflower 1/4 medium
  • Button mushrooms(halved) 6-7 medium
  • Green chillies(slit) 2
  • Tofu(cubed) 100 grams

Cooking Directions

Soak brown rice in four to five cups of water for one hour.

Drain and set aside.Heat rice bran oil in a deep pan.

Add bay leaf, cloves, cumin seeds and cinnamon.

Add drained rice and salt and saute for one to two minutes.

Add five cups of water. Bring to a boil.

Add green peas, carrots, French beans, cauliflower, mushrooms, green chillies and tofu.

Stir and mix. Bring to a boil. Reduce heat to low, cover and cook till done. Serve hot.
