• 2 cups coconut shredded
• 1 1/4 cup sugar
• 3/4 cup oil
• 5 tablespoons milk powder
• 1 teaspoon vanilla
• 1 cup semolina
• 3 eggs
• 10 tablespoons heavy cream
• 1 teaspoon baking powder

Beat the eggs until it''s creamy in texture, add vanilla and beat for another 2 minutes.

Add the rest of ingredients and blend gently until well mixed.

Let it rest for 5 - 7 minutes.

Pour in cupcake molds.

Put in a preheated oven 300° for 15 -20 minutes or until the sides are golden in color. The surface will stay too soft as long as the cupcakes are hot, but after they cool down the surface will take a nice form.
