Recipe for Lasani Biryani

Ingredients

  • Rice ½ kg (boiled)
  • Meat 1 kg
  • Onions 250 grams (finely sliced)
  • Tomatoes 250 grams (cut thick pieces)
  • Ginger/garlic paste 1 tbsp
  • Dried plums 58 grams
  • Yellow food colouring 1 pinch
  • Screw pine 1 tsp
  • Cream 1 cup
  • Yogurt 250 grams
  • Star aniseeds 2
  • Black & green cardamoms 4
  • Whole red chillie 8
  • Caraway seeds 1 tsp
  • Black pepper 1 tsp
  • Hot spices powder 1 tsp
  • Turmeric powder 1 tsp
  • Bay leaves 2
  • Coriander leaves ½ bunch
  • Mint leaves ½ bunch
  • Green chillies 10
  • Salt 1 ½ tsp
  • Oil ½ cup

Cooking Directions

Boil meat in water.

Coarsely grind star aniseeds and green and black cardamoms in a blender.

Heat a little oil in a pot and fry onions till they turn golden.

Separate some of the onions and keep them aside.

Add meat, dried plums, ginger/garlic, red chillies, salt, turmeric powder, ground masalas, bay leaves, caraway seeds, black pepper and yogurt to the pot. Cook on high flame.

Add tomatoes, half of coriander and mint leaves and 6 green chillies. Cook till water almost dries.

Add cream after a few minutes and cook till dry, place a layer of rice over the masala.

Put the remaining green chillies and mint and coriander leaves, hot spices powder, food colouring and screw pine over rice.

Cover with a lid and keep on dum for 10 minute.

Delicious Lasani Biryani is ready, take it out in a serving dish garnish with remaining fried onions and serve
