• 1 cup Oil
• 2 lemon
• 4 Green chili (chopped)
• 1/2 cup mint leaves
• to taste Salt
• 1 tsp black pepper
• 1 tbsp Red chilies crushed
• 1 tsp cumin seeds
• 10 Almond finely diced
• 2 cups cottage cheese
• 1/2 kilo Eggplant

Cut eggplant into half and soak in salt water

Heat oil in a wok and fry eggplant until golden

Mix cottage cheese, almonds, cumin seeds, red chilies, black pepper, salt, mint leaves, green chilies and lemon juice in a bowl

Layer cheese mixture on each eggplant slice

Bake in a baking dish in a preheated oven for 5mins

Serve hot cheese eggplant for dinner
