Recipe for Marinated Carrot Salad

Ingredients

  • 1 lb. carrots
  • 1 oinion sliced
  • 1 green pepper sliced
  • 1/2 can (10 oz) tomato soup
  • 1/4 cup white sugar
  • 1/2 cup vegetable oil
  • 1/2 tsp. dry mustard
  • 1/3 cup vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Cooking Directions

Cut carrots in 1/4? slices. Cook till just tender.

Do not overcook. Drain

Add sliced onions and peppers to carrots.

Whisk the remaining ingredients together. Pour over vegetables.

Let it sit in the fridge overnight.

To Serve:
Lift vegetables out of sauce.

Left over sauce can be used again or as a salad dressing.
