• 1 ripe mango small cubes
• 1 can of sweet kernel corn, rinsed and drained
• 1/4 red onion, diced
• 1/4 green pepper, diced
• 1/4 red pepper, diced
• 1/4 cup ripe pomegranate seeds
• 3 leaves basil, chiffonaded
• 2 tbsp chopped cilantro for garnish
• 1 tsp black mustard seeds
• 1 tsp cumin powder
• 1 tsp red chili powder
• 1 tbsp olive oil
• salt and pepper to taste

Temper the mustard seeds, cumin and red chilli powder in the olive oil.

Add the onions, and saute for a few minutes until they are soft.

Add the onion mixture to the remaining ingredients and mix well.

Season with salt and pepper, and garnish with the chopped cilantro.
