• 1 x 200g punnet grape tomatoes, quartered
• 1/2 red onion, finely chopped
• 1/3 cup chopped fresh coriander
• 2 tsp fresh lime juice
• 1/2 tsp finely chopped fresh red chilli (optional)
• Quesadillas (see related recipes), to serve

Combine the tomato, onion, coriander, lime juice and chilli, if desired, in a bowl.

Cover with plastic wrap and set aside for 1 hour to develop the flavors.

Serve with the quadrilles.
