• 5 tablespoons white balsamic vinegar
• 3 tablespoons fresh lime juice
• ½ tablespoon sugar
• Salt to taste
• 2 teaspoons red pepper flakes
• ½ cup extra-virgin olive oil
• 1 large firm ripe mango, peeled and cut into ½ -inch cubes
• 1 pound pineapple, peeled cored and cut into ½ -inch cubes
• 1 medium red onion, thinly sliced
• 1 small red pepper, thinly sliced
• 1 cup cilantro leaves, chopped

Whisk together vinegar, lime juice, sugar, salt, and red pepper flakes until sugar is dissolved.

Add the oil in a thin stream, whisking until emulsified.

Add remaining ingredients and toss until coated.

Serve chilled.
