Recipe for Apple Cinnamon Muffins
Ingredients
- 1/2-cup margarine or butter
- 3/4-cup white sugar
- 1-egg beaten
- 1-cup buttermilk
- 1-tsp salt
- 1 1/2-cup diced apple
- 1-cup all-purpose flour
- 3/4-cup whole wheat flour
- 1-tsp baking soda
- 1-tsp cinnamon
- Topping
- 1-tsp cinnamon
- 2 to 3-tbsp white sugar
Cooking Directions
Blend margarine, sugar and egg until smooth
Add buttermilk, salt, apples and mix well
Stir together flour, baking soda and cinnamon; stir to moisten
Spoon into greased muffin cups
Sprinkle with topping
Bake @375*F for 20 minutes
