Recipe for Coconut Panna Cotta with Pinepple Jelly

Ingredients

  • Coconut milk- 1 cup (I used ready-made coconut milk)
  • Fresh Cream- 1 cup
  • Sugar- 1/2 cup
  • Agar agar- 2-1/4 teaspoons
  • Pineapple jelly crystals

Cooking Directions

Follow the instruction on the jelly pack to make jelly.
Once the jelly crystals are dissolved in the water, take a few spoonfuls and pour into your serving moulds/bowl/ramekins. 2 tablespoonfuls of the liquid jelly in each mould would do.

Allow to cool and set completely.
Meanwhile, mix the coconut milk, sugar, fresh cream and agar agar in a saucepan. Bring to a boil on medium heat.

Switch off heat. Touch and check if the jelly in the moulds are set. If they have set, carefully pour the milk mixture into the moulds. Let cool and allow to set in a refrigerator.

Once the Panna Cotta is set, dip the base of each bowl/ramekin in a bowl of very hot water for 30 seconds and invert onto a serving plate.

Decorate it the way you like and serve. (we need only a few spoonfuls of the liquid jelly for this recipe)
