• Pearl Barley 1/3 cup
• Grated Rind and Juice 2 lemons
• Caster Sugar 1/2 cup

Place barley in a sleeve.

Rinse under running water until water runs clear then place in a saucepan with lemon rind and 6 cups of water.

Bring to the boil over medium heat. Simmer for 10 mins then strain mixture into heatproof bowl, discarding barley.

Add sugar to bowl.

Stir to dissolve then stir in lemon juice. Pour into bottles and refrigerator until chilled.
