Recipe for Chicken Masala Fry

Ingredients

  • 1. 2 lbs, Chicken (breast meat or leg quarters with bones)
  • 2. 2 medium onions, sliced
  • 3. 4 tbsp curry powder (Or 2 tsp cumin powder, 4. 2 tsp coriander powder, 1/2 tsp turmeric powder, 2 tsp chilli powder
  • 5. 8 curry leaves
  • 6. 2 tbsp olive oil
  • 3 cloves
  • 7. 1/2 inch Cinnamon stick
  • 8. 1 cup yogurt
  • 1 tomato
  • 9. 2 tbsp lemon juice
  • 10. 1/2 cup coriander leaves chopped for garnish

Cooking Directions

Cut the chicken into medium-sized pieces, clean, and add salt and the curry powder/s and marinate for 15 minutes.

Heat olive oil, fry the sliced onion, cloves and cinnamon stick.

When onion turns golden, add the chicken, curry leaves and saute for a couple of minutes.

Then add yogurt, tomato and stir a few turns and add 2 cups of water and lemon juice.

Cook till chicken is tender, add salt to taste, garnish with coriander leaves.
