• 3 eggs
• 2 tablespoon shredded cheese
• 2 tablespoon bell pepper cut in small size
• 1 tablespoon chopped olive
• Oil to fry
• Salt to taste
• 2 tablespoon mushrooms
• 1 tablespoon chopped tomato
• 3 tablespoon sausage cut small
• 1/4 teaspoon black pepper powder

In a pan heat oil and fry the sausage, bell pepper and mushrooms. Set aside.

Beat the eggs with salt and black pepper.

In a pan heat oil, add the eggs, and reduce the heat to low.

When the bottom of the egg starts to firm, while the top is still moist, add the sausage
mix to one side of the egg, sprinkle olive, tomatoes and cheese.

Lift up the edge of one side of the omelette and fold this half so that it covers the other
half and sits neatly on top.

Serve hot, with grilled or toasted bread.
