Recipe for Brinjal Pickle

Ingredients

  • Brinjal, medium size – 4 nos
  • Chilly Powder – 2 tbs
  • Medium size Tomatoes – 3 nos
  • Oil – 5 tbs
  • Tamarind – 1 gooseberry size
  • Curry leaves – 20 nos
  • Asafoetida – 1/4 tsp
  • Turmeric powder – 1/4 tsp
  • Salt to taste

Cooking Directions

In a pan heat the oil and add chilly powder, turmeric powder, curry leaves and stir for few seconds.

Now add sliced brinjal, tomatoes and cook for 5 minutes.

Add the extract of tamarind and stir, when it is cooked add asafoetida and salt, mix well.

While stirring the brinjal pieces should not be smashed.
