Recipe for Masala Machi Bites With Apple Confit

Ingredients

  • 24 pieces fish - 2"x2" (bite-size)
  • 2 Tbsp garlic paste
  • 2 Tbsp ginger paste
  • 6 tsp red chili flakes
  • Salt as per taste
  • 6 tsp cumin seeds
  • 3 red apples
  • 2 pink apples
  • 4 Tbsp sugar
  • 4 Tbsp jaggery
  • 150 ml vinegar
  • 5 cloves
  • 3 star anise
  • Juice of 3 lemons
  • 9 baby onions
  • 5 Tbsp cooking oil
  • 3 Tbsp yogurt
  • 10 mint leaves
  • 1 bunch green onions/ scallions/ spring onions
  • For Plating:
  • Tooth pick or cocktail skewer

Cooking Directions

Marinate the fish with garlic paste, ginger paste, red chilli flakes, salt and cumin seeds.

Place in a dish and let it sit for 8 minutes.

Dice the apples and put into a pan of boiling water.

Add sugar, jaggery, vinegar, clove, star anise, lemon juice.

Once apples are cooked, add red chilli flakes and remove the star anise and cloves.

Reserve a few pieces of the apple for the garnish and puree the rest to get apple confit.

Reserve some stock syrup (the syrup that the apples were cooked in) for boiling the baby onions.

Boil baby onions in stock syrup Fry the fish in cooking oil.

Make a small bowl of raita with yogurt, mint, lemon, cumin.

Plating Up:
Take a long toothpick or small cocktail skewer and set 3 pieces of fish on each. Top with a layer of the apple confit.

Serve immediately with raita, apple pieces and green onions on the side.
